The Spirit of the Caribbean enjoyed world-wide. A spirit steeped in naval tradition and one that historically has also been associated with fun, beaches, tropical drinks and sunshine, rum is the perfect spirit to complement any social setting. Although rum is most associated with the Caribbean, it is the spirit with arguably the strongest global distilling history. Rum production has rules but varies, dependent on where produced, but it is commonly stipulated that rum must be distilled from sugar cane, or a by-product of sugar cane. Most rums in the world are distilled from fermented molasses, although the French islands and a few other countries like Mauritius, Japan, South Africa and Brazil still use fresh sugar cane juice, which gives their rums a distinctive flavour. Rum has the most diverse style profile of any spirit, whether unaged or aged, and can be consumed straight or mixed in a cocktail, dependent on expression and taste preference.
